Frozen Greek Yogurt Bars

  • Ingredients:
– 1/3 cup low-fat Greek yogurt
– 1 scoop vanilla protein powder
– Water or plant-based milk (of your choice, as needed)
– Nut butter of choice (optional, for drizzling)

Instructions:

1.  In a mixing bowl, combine the low-fat Greek yogurt and one scoop of vanilla protein powder. Stir well until fully blended.

2. Gradually add water or your choice of plant-based milk to the mixture. Stir until you achieve your desired consistency. If the mixture is too thick, add a little more liquid.

3. Line a baking tray with parchment paper to prevent sticking.

4. Pour the yogurt mixture onto the prepared baking tray. Use a spatula to smooth it out evenly. You can drizzle any nut butter of choice (such as raw almond butter from Trader Joe’s) over the top for added flavor.

5. Place the tray in the freezer and allow it to freeze for 2 to 4 hours, or until firm.

6. Once frozen, remove the tray from the freezer. Cut the mixture into your desired shapes and sizes.

7.  Store the frozen yogurt bars in an airtight container in the freezer until ready to enjoy.

Fruit Birthday Cake

  • Ingredients:
– 2 large melons (watermelon, cantaloupe, honeydew, or a combination)
– Assorted fruits for decoration (e.g., strawberries, blueberries, kiwi, pineapple, etc.)
– Wooden skewers
– Toothpicks

 Instructions:

1. **Prepare the Melons:**
   – Cut the first large melon into three round pieces, ensuring the middle section is at least 6-7 inches thick.
   – Use a sharp knife to carefully cut out the round shapes, making one piece larger than the other to create a two-tiered cake effect.

2. **Cut the Second Melon:**
   – Repeat the process with the second large melon, cutting out two round pieces that will fit on top of the layers from the first melon. Make sure one piece is slightly smaller than the other.

3. **Stack the Cake:**
   – Take the largest melon layer from the first melon and place it on a serving platter.
   – Use 3 to 4 wooden skewers to secure the next larger melon layer on top. This will help stabilize the cake.
   – Add the smaller melon layer from the first melon on top of the second layer.
   – Finally, place the smaller melon layer from the second melon on top, securing it with additional skewers if necessary.

4. **Decorate the Cake:**
   – Use assorted fruits to create a beautiful design on the cake. You can cut fruits into fun shapes, such as stars or hearts, or simply arrange them artfully around the layers.
   – For more detailed designs, use toothpicks to attach smaller pieces of fruit to the larger ones or create fun patterns.

5. **Serve:**
   – Once decorated, your fruit birthday cake is ready to be served! Slice into the layers and enjoy a refreshing, healthy treat that’s perfect for any celebration.

 Tips:
– Feel free to use any seasonal fruits you like for decoration.
– You can add whipped cream or yogurt on the side for an extra treat!

Enjoy creating your vibrant and delicious fruit birthday cake with your choice of melons!
